Animal Based Muffins (Baby-led Weaning)

Hi friends, I have been crafting recipes that are animal based and as clean as possible to encourage other families to consider better options for their children and their health! I present to you, Animal Based Muffins (baby-led weaning)! It does feature the fabulous Carnivore Crisp Chicken flour, but if you want to, you can make your own chicken flour! I will share a recipe for this soon, stay tuned!
Supplies:
Stand mixer or hand mixer and bowls
measuring cups and spoons
rubber spatula
muffin baking tray
liners of choice
Ingredients:
5 tbsp room temp salted butter
2 whole eggs
2 very ripe bananas
1tbsp gelatin powder
1/2 cup of @carnivorecrisps chicken or beef flour (save here with code REALLIFECARNIVORE )
1/4 cup natural peanut butter (optional)
1/2 tsp cinnamon
1/2 tsp vanilla extract
1/4 tsp of salt
Optional: 1-2 tbsp raw honey 🍯
Instructions:
1. Preheat oven to 350F.
2. Line a muffin tin with muffin papers OR, grease the muffin tin.
3. Add all ingredients to the food processor and process on high until well incorporated.
4. Spoon batter into muffin papers until they’re about 3/4 full.
5. Bake for 15-18min - the toothpick test isn’t the best for this recipe but you can use one.
6. Place on a cooling rack and allow to cool for 7-10min before serving to your little one. (Or yourself! lol 😂)
7. Store remaining muffins in an air tight container in the fridge.
Makes 9-10 muffins when you fill the papers 3/4 full. If you fill them more full, watch and adjust your baking time. If making mini muffins for little hands, try cutting the baking time down to 8-10min and check with a toothpick to see if they are done, or tap the tops to see if they are still jiggly. This recipe is a little more on the crumbly side!
