Collagen Stuffed Protein Cookies

Collagen stuffed protein cookies are no joke, friends. I thought of this recipe when I was standing in my kitchen and looking out the window. On the outside, it may have looked like I was staring off into space, on the inside, I was compiling the perfect recipe! But I’ll let you be the judge!

These are super easy to make, and you probably have all of the ingredients already, if not, I will include links where you can order and receive discounts!


Supplies:

• mini muffin pan • mini muffin liners • spatula • mixer (hand or stand)

• mixing bowl


Ingredients:

1 Power Fit Foods bar, I used cocoa (more if you want to make more!)

1/2 scoop Equip Foods collagen peptides, I used vanilla

2 ounces of full fat cream cheese , room temp

2 ounces of butter, room temp (can use salted and omit the salt below)


Instructions:

  1. Line the mini muffin pan with the mini muffin liners.

  2. Cut the power fit foods bar into 6 pieces.

  3. Take each piece, and press it into the bottom of one of the muffin tin cups. Gently pressing it and flattening it out into the bottom to make your cookies.

  4. In a bowl, whip, your cream cheese, butter, collagen, and salt until smooth.

  5. Take generous spoonfuls of your collagen mixture, and spoon over three of the cookie bases. You may have some leftover.

  6. Take the other three cookies out of the muffin tin, and gently press them on top of the collagen mixture.

  7. Refrigerate for 20 to 30 minutes before serving.

  8. Removed from refrigerator, peel off the muffin paper and enjoy!
