Hands down, this is the BEST Carnivore Cheese Sauce Ever. Creamy, dreamy, thick, flavourful and just what you want when you think of mac n cheese!
I have tried many recipes and some have worked well, others have been total flops. When I was a child, one of our babysitters used to make us homemade macaroni and cheese every day for lunch. We used to ask for it all the time! This recipe does not disappoint and will turn your frown upside down while transporting you back to your childhood to the easy mac n cheesey days. LOL
**Note: This recipe can easily be doubled. If strict carnivore, omit cayenne and yellow mustard
Supplies:
medium saucepan
whisk
rubber spatula
cheese grater
measuring spoons and cups
Ingredients:
1/4 cup of butter
4 oz cream cheese
1 tbsp milk (or a splash)
pinch of cayenne (omit if strict carnivore)
1 tsp yellow mustard (omit if strict carnivore)
1/4 tsp sea salt
1/3 cup grated sharp cheddar
1/3 cup smoked gouda
1/4 cup grated parmesan
Instructions:
Add butter and cream cheese to your saucepan and melt over medium heat. Stirring frequently.
Add cayenne, salt, mustard (if using) and milk. Gently whisk to combine.
Add cheeses and continue whisking or stirring with rubber spatula to melt cheeses and combine.
Once everything is well combined, serve hot over Carnivore Gnocchi, PSFB noodles, patty melts or use as cheese for your meat nachos!
Store in an air tight container in the fridge for one week. Store in a ziplock bag in the freezer for up to 3 months.
This recipe was good! We did modify it bc we didn't have Gouda. Instead,we used an Italian mix of cheeses.. (mozzarella, Parmesan, provolone and asiago.) I also added more milk to make creamier, probably closer to 1/4 cup.
Make sure to lower the heat at step two... Or take off and on as needed so the cheese doesn't cook... you just want to melt it.
Overall it is a good sauce to mix things up as we explore the carnivore diet. I will be trying this again when I get Gouda again. A smoked Gouda would elevate the sauce!
Followed the recipe to the letter and it turned out more like "cheese crumbles in grease" instead of a sauce. Recipe deserves 1 out of 5... and as low as 0, if I could rate it that much.
